We all know what superfoods are and what they can do for ue so I decided to create a superfood  PACKED cookie which is almost gluten free! To make it gluten free simply sub the flour with an all purpose gluten free flour and you’re on your way! These cookies pack a superfood punch of golden berries, chia and flax seeds, yumberry powder, goji berry powder, cacao nibs and mulberries!

This is just one of those cookies you won’t feel guilty eating!


Chia Seeds are known for being rich in Omega-3 fatty acids as well iron, magnesium, fiber, calcium, zinc and antioxidants! Also, they make a great binder and egg replacer similar to flax seeds. Golden Berries are an Incan berry that contain vital nutrients like beta carotene, protein, Vitamin A, Vitamin C, iron, fiber and others! Cacao is super high in antioxidants and magnesium! Goji Berries have been gaining popularity for years now and with good reason they contain 18 amino acids and more than 20 trace minerals as well as Vitamin A, C and E.  Mulberries are rich in Vitamin C, iron, calcium and fiber! Yumberries are packed with antioxidants and rich in Vitamin C! In China, they’re known as yang mei fruit and have been hailed to aid digestion, fight inflammation and lower bad cholesterol! Let’s not forget the benefits of Flax Seeds which are high in Omega-3 and 6 fatty acids.

The cookies themselves are slightly crunchy from the combination of the cacao nibs and the berries but also chewy and sweet. You would think they would taste like oatmeal cookies but they have a fruity flavor from the berry powders. Definitely worth a try! I didn’t know what to expect when I opened up the packge but man have I fallen IN LOVE with these chips! I sincerely think they need to win an award with how good these kale chips are. Ugh, love, love, love! A little bit info about the chips themselves: they are not baked or fried but dressed in a sauce and dehydrated for 12 hours until crispy which makes these babies raw (although their website does state that some of the sauces not the kale itself is not raw), gluten and soy free (except for Spicy Miso) as well as fantastically healthy! They’re made and packaged in Brooklyn, NY and they are my new favorite thing ever!! The Coconut Cacao was so good I couldn’t resist eating them before taking picture which is why that one is missing but man do you have to try it! It is chocolate, coconut heaven!

kale5v2It has that “cheeziness” of nutritional yeast with a spicy kick from the cayenne pepper with a taste to die for. Crunchy, nutty and a perfect alternative to potato chips.

Now onto the recipe!


Superfood Cookies


Preheat your oven to 350°F.

Mix together the ground flax seeds and warm water until well combined and then set aside until it becomes gelatinous.

In a small bowl, beat together the butter or coconut oil with the coconut sugar until light and fluffy and then beat in the flax egg until combined.

In a separate bowl, sift together the oat and wheat flour, salt, baking powder, goji and yumberry powder and then add in the wet ingredients and mix until thoroughly combined. Fold in the cacao nibs and the berries and then refrigerate for 15 – 13 minutes.

After refrigerating, use a tablespoon measure to measure the dough and then roll into a ball and place on a parchment sheet lined cookie sheet. When you’re done rolling them all out, bake for 10 – 12 minutes or until they set.

Let cool for AT LEAST 10 minutes but I would let them sit a bit longer as they are delicate!
